Southern Boil Grill Packets
These adorable and easy grill packets are the perfect dish for both a backyard BBQ or a casual weeknight dinner. All you have to do is toss in the ingredients and let your oven do the hard work. We love these with any of our burgers, or with our Spicy BBQ Bean Balls.
SERVES 4
12 fingerling potatoes
2 ears corn
1 (8-oz [227-g]) package prepared seitan
1 tsp Old Bay Seasoning
½ tsp onion powder
1 tsp liquid smoke
2 cloves garlic, minced
Preheat the oven to 400°F (204°C). Cut 8 pieces of 6 × 6-inch (15 × 15-cm) aluminum foil.
Quarter the potatoes and cut each ear of corn in half. Divide the potatoes, corn and seitan among 4 pieces of foil. Evenly sprinkle the vegetables with the Old Bay, onion powder, liquid smoke and garlic.
Place the remaining pieces of foil over the food and form into packets. Shake the packets until the ingredients are well incorporated. Slice a steam vent on the top of each packet and place into the oven. Bake for 45 minutes. Allow the packets to cool slightly before serving.
